Asian Fish Parcels
Don?t be afraid to cook fish. Fresh fish is full of omega 3 fatty acids, is low in bad fats and local wild fish is low in toxins without that yucky fishy smell you get down at the jetty. This meal is so quick and requires little washing up, which means more time for lazing about.

Ingredients
- 2 x 200g Firm white fish pieces (I use local thread fin salmon or rock cod)
- 1 Large bunch Asian greens (bok choy, choy sum, green beans, etc)
- 1 piece ginger, thumb-sized (cut into strips)
- 1 clove garlic (crushed)
- 1 Small chili (thinly sliced)
- 1 spring onion (thinly sliced)
- 2 tablespoons soy sauce (or wheat free tamari)
- 2 teaspoons sesame oil
- 1 handful coriander (chopped)
Directions
Make me up | |
Place 2 large pieces of aluminum foil onto your kitchen bench. | |
Next, place a same-sized piece of baking paper on top of each piece of foil. | |
Lay the vegetables down in the centre and top with your piece of fish. | |
Sprinkle over half of the chillli, garlic, spring onions, coriander and ginger. | |
Drizzle with one teaspoon of sesame oil and one teaspoon of soy sauce. | |

Now comes the trickiest part. You want to create a steamproof little pocket, so fold the foil and paper over to cover the fish and fold and press the edges together to create a firm seal. | |
Place your perfect pockets onto a baking tray and bake in a 180 °C oven for 15-20 minutes until the fish is opaque and the veggies are soft. | |

You can serve it with steamed brown rice if you must, but really, it's a complete meal. |
