Grilled Red Snapper – Recipe

If you are a lover of fish and you want a little bit of that exotic taste when cooking your red snapper, this meal is going to make your day.

List of ingredients

500 grams of red snapper

Some fresh thyme

1 green onion

1 pimento pepper

1 scotch bonnet pepper

1 lemon

Some dill

200 grams of banana leaves

100 ml of coconut milk

Method

One of the first things that I need to do is to make some thin cuts down the belly of the fish because this is going to help the fish cook pretty quick.

I am also going to cut a couple of slices of that lemon, two slices should be enough, I am going to bruise up the green onion and chop up the dill.

I then cut the pimento pepper in half and I will leave the seeds because it is going to give the food a really nice and hot flavor, I will also cut a couple of slices of the scotch bonnet pepper, I will leave a couple of the seeds because I want a little bit of that sting from it.

Next, I am going to bend up that green onion, open up the cavity of the fish and stick the green onion in there,as we want all that flavor to spread evenly inside the fish, I am also going to add that fresh thyme, the scotch bonnet pepper as well as the dill.

After I tucked everything inside the fish, it is now going to taste nice and lovely. Now I will use two pieces of those banana leaves, overlap them and put that fish on top of them, and we are going to season it up with the salt and pepper, make sure to work that salt and pepper down into those slits that we made on the fish.Fresh red snapper

All that I have to do now is to pour that coconut milk all over the fish and don't worry if you place the coconut milk only on one side because once it starts cooking, the steam will go everywhere inside the fish and it will give it a nice flavor.

After I add the coconut milk I am going to stick the lemons on top of the fish, wrap the banana leaf up and simply place it on the grill.

I make sure to turn the heat to high and let that cook for ten minutes and then I am going to flip it over. After 20 minutes the fish should be almost done and you can really smell all those wonderful flavors.

Finally, use kitchen scissors to cut down the banana leaf and while it is not the prettiest thing in the world, I assure you that the flavors and the taste will be really great.
