Ingredients

  • 1 1/2 cup walnuts
  • 8 medjool dates (pitted)
  • 1/3 cup cacao or carob powder
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 2 teaspoons water
  • dessicated coconut (to roll the balls in)

    Food processor

    Directions

    1. Place the walnuts and salt in the food processor and process until finely ground
    2. Add the dates and process until the mixture becomes sticky
    3. Add the cacao or carob and vanilla and process
    4. Add the water if needed
    5. Mould into round balls and roll in the coconut

    Store in the fridge until required - although to tell you the truth, they probably won’t last long!
